Persian Lime and Blackberry Ginger Pear Salad
Late summer to early autumn is the season of the blackberry! This Persian Lime Blackberry Ginger Pear Salad has it all, greens, fresh blackberries, thinly sliced pears, sliced almonds, soft cheese and a beautiful Persian Lime/Blackberry Ginger Vinaigrette. This gorgeous salad is going to become one of your favourites.
8 cups of spinach or spring mix lettuce
1 package of fresh, ripe blackberries
2 ripe pears, cored and sliced
¼ cup of sliced almonds
¼ cup of Feta or Goat cheese, crumbled
2 green onions, thinly sliced (optional)
Dressing:¼ cup Di Oliva Blackberry Ginger Balsamic Vinegar
¼ cup Di Oliva Persian Lime Extra Virgin Olive Oil
1 tsp lime zest
½ tsp Dijon mustard
½ tsp grated fresh ginger (optional)
Salt and pepper, if desired, to taste
Yield: About ½ cup
Whisk together (or shake in a small jar) all the ingredients for the dressing. Set aside.
Arrange lettuce, blackberries, pear, green onion, almonds and feta cheese evenly on a salad plate.
Drizzle the dressing on the salad to taste.
